Bitter orange oil is more complex and, in our opinion, more interesting than sweet orange oil. It is, however, quite restricted by IFRA with an allowance of up to 3% of your finished product. Bitter orange (also known as bigarade or Seville orange) is the fruit from which the original Marmalade was made. The finest qualities come from Europe where adulteration is unlikely. According to Steffan Arctander: "The odor is very peculiar, fresh and yet "bitter" in the sense of "dry", but with a rich and lasting, sweet undertone.
