Ethyl butyrate is the intensely sweet scent of overripe bananas and pineapple. Absolutely essential for any fruit accords, this material is also an excellent top note when you are looking for something a little more interesting that the standard allyl amyl glycolate sparkle. The butyrate differs from the acetate in having a slightly sour butter quality which is particularly naturalising and indispensable in a complex gourmand.
