Mace is the lace-like aril that wraps around the nutmeg seed, and the oil distilled from it is the more refined version of the same spice. Use it wherever you would use nutmeg but want something gentler — in fougères for sweet spicy warmth, in colognes for aromatic depth, in orientals for a natural richness that synthetic spice notes cannot replicate. Mace oil opens with warm, sweet spice — reminiscent of nutmeg and cardamom but softer, more delicate, without the rubbery sharpness that fresh nutmeg oil often has.
